今天学做Thai food吧!第一次吃Thai Food还是在Eugene了,可能不会点菜,吃完了觉得和中国菜没什么两样,倒是那个Thai Tea加了太多的cream和糖,虽然没喝完,但是印象深刻。
不过来了东部,吃过两次觉得很好,到底和中国菜有一点点不同的!今天Anne做的Pad Thai简直和餐馆做得没有什么两样!Pad大概就是面或者米粉的意思 (我猜呀!), 因为这是这个菜的主要材料。
所以借了菜谱来,下次自己实践一下。
原料及过程:
** 4 个人的量
1) 1/2 磅 米粉 (Rice sticks,大概半斤) 开水浸泡20分钟,捞出过凉水待用
3 tablespoon 香菜末
3/4 cup 花生末
2)1/4 cup 米醋
1/4 cup 鱼露
1 tablespoon 麻油
1/4 cup 糖
1 teaspoon 辣椒粉
以上5种混合均匀-------------------------------mixture
3)热锅加入 1 tablespoon 花生油
加入 2 瓣蒜 (切蓉), 炒香
放入 1/4 磅虾(切丁) 炒至虾肉变色
放入 2 鸡蛋, 和虾肉炒在一起
在放入 4 根青葱 (切末)
1/4 磅豆芽 (大概两把,要是喜欢多来点也无所谓)
4) 翻炒均匀,将米粉倒入锅内,再加入mixture,炒1分钟
5)关火,将半份米粉盛入大碗,撒一半香菜末,一半花生末;再放入另一半,盖上另一半香菜末和花生末。
还算简单吧。这个大概不是菜,是主食哦!

8 oz (250 g) rice noodles (sen lek)
3 tablespoons oil
3 garlic cloves (kratiem), minced
1/4 cup dried shrimp/prawns
1/4 cup (2 fl oz/60 ml) fish sauce (nam pla)
1/4 cup (2 oz/60 g) sugar
2 tablespoons tamarind juice (ma-kaam piag)
1 tablespoon paprika
1/2 cup fried tofu
2 tablespoons dried unsalted turnip, cut into small pieces
1 egg, beaten
1/4 cup 1-in (2.5-cm) lengths chopped chives
1/4 cup (2 oz/60 g) ground roasted peanuts
1 cup bean sprouts
Garnish: 1/2 cup bean sprouts
1/2 cup chopped chives
1/4 small banana blossom, cut into strips
1/2 lime, cut into wedges
烹饪方法:
1. Soak the rice noodles in cold water for 30 minutes, or until soft. Drain, and set aside.
2. Heat a large skillet until hot, then add the oil. Add the garlic and dried shrimp, and stir-fry. Add the noodles and stir-fry until translucent. It may be necessary to rece the heat if the mixture is cooking too quickly and the noodles stick.
3. Add the fish sauce, sugar tamarind juice and paprika. Stir-fry the mixture until thoroughly combined. Stir in the tofu, turnip and egg.
4. Turn the heat to high and cook until the egg sets, stirring gently. Thoroughly combine the mixture, and continue cooking over medium-high heat for about 2 minutes until most of the liquid is reced.
5. Mix in the chives, peanuts and bean sprouts. Place on a serving dish, arrange the bean sprouts, chives, banana blossom and lime attractively and serve.
