I think Chinese cuisines are very hard to introce really. Because a lot of foreign people find Chinese food unbelievable----there are tens of thousands of kinds of dished and favours. For example, a chicken can be cooked in 100 different ways in China. My favourite dish is the Spicy and Hot Bean Curd. It's the speciality in my hometown. I guess you haven't heard of that, but trust me, it's so delicious.
An American friends of mine told me, the thing he missed the most after he went back to America was Chinese food, and he said Chinese food should belong to the heaven. So I don't really know how to introce Chinese cuisins to you. Only when yourself have tasted them , can you find how great they are.
