首先将水烧开,加入食盐,最好多放点盐,然后将水放凉。
倒入容器中,容器最好选择专用的腌制食品的。将萝卜洗净,吹干,用干净不粘油的筷子,将萝卜按序放入容器中,盖上盖子,最好选择密封效果好一点的盖子。约半个月就可吃了。期间最好不要开盖,吃时用干净不粘油的筷子取。
选好腌渍原料 腌制感菜原料,必须符合两条基本标准:
一是新鲜,不杂菌感染,符合卫生要求;
二是品种必须对路,不是任何蔬菜都适于腌制咸菜。
比如有些蔬菜含水分很多,怕挤怕压,歇腐易烂,象熟透的西红柿就不宜腌制;
有一些蔬菜含有大量纤维质,如韭菜、一经腌制榨出水分,只剩下粗纤维,无多少营养,吃起来又无味道;还有一些蔬菜吃法单一,如生菜,适于生食或做汤菜,炒食、炖食不佳,也不宜腌制。
因此,腌制咸菜,要选择那些耐贮藏,不怕压、挤,肉质坚实的品种,如白菜、萝卜、苤蓝、玉根(大头菜)等。
